Black Bean Buddha Bowl

For the bowl:

  • 100g brown rice
  • 1 tin black beans
  • 2 big cloves garlic - finely chopped
  • Couple of handfuls of spinach
  • 1 tbsp of pumpkin and sunflower seeds

For the dressing:

  • 3 tbsp tahini
  • Juice from 1 lemon
  • 1-2 tbsp dill chopped quite small
  • 1 tbsp olive oil
  • 70ml water
  • Pinch of salt


  1. Get the rice on to cook in a saucepan (should take 30 minutes).
  2. In a frying pan, add a splash of oil and fry the garlic for a minute.
  3. Add the beans and stir well.
  4. After a couple of minutes, add in a handful of spinach and stir until the spinach has wilted, about 5 minutes.
  5. Serve with drained and rinsed rice and the dressing (as below).

For the dressing:

  1. Mix all ingredients in a bowl.
  2. Add more water if it's too thick.
