peanut butter overnight oats in a glass jar

Peanut Butter Overnight Oats

  • Author: Dan Saunders
  • Prep Time: 5
  • Total Time: 5
  • Yield: 2 1x

  • 1 cup oats
  • 2 cups almond milk
  • 1/4 cup chia seeds
  • 2 tbsp peanut butter
  • 1 tbsp cacao nibs
  • 4 raspberries
  • 1 apple chopped very finely
  • 2 tbsp raisins
  • Sprinkle of chopped cashews on top

  1. Split the oats, chia seeds, almond milk and raisins between two bowls or jars. That's 1 cup of milk, 1/2 cup oats, 1/8 cup of chia seeds and 1 tbsp raisins per bowl/jar. Then give it a good stir.
  2. Leave in the fridge overnight or for at least 3 hours.
  3. After the oats have thickened up overnight, add the peanut butter and stir up really well.
  4. Stir the apple and cacao nibs through.
  5. Add the raspberries on top and sprinkle with cashews.

Add a dash of maple syrup if you like a sweet breakfast, but we think this one is sweet enough without.
