Brush the potatoes with olive oil or oil spray, then put the potatoes in the air fryer basket. Cook for 15 minutes in the air fryer.
Toast the Szechuan peppercorns over a medium heat in a wok or frying pan. Crush the peppercorns into a fine powder in a pestle and mortar, then set aside.
In a small bowl, mix the oil, garlic granules, dried herbs and a pinch of salt and ground black pepper. Then spread onto the potatoes in the air fryer basket.
Turn the air fryer back on to 200°c / 390°f for 10 minutes, flip halfway, then add more of the herby oil mix. Air fry again for 5-10 minutes. Enjoy!
