Coat the tofu in cornflour, then fry it off in a hot pan with oil until golden. Then set aside.
In a splash more oil, place the pan on a hob and add in the peppers and chilli (if using).
Add in spring onions, broccoli, pineapple and cook for a few more minutes.
Pour in the stock and all of the sauce ingredients. Bring up to a simmer and pour in cornflour slurry and add the tofu. Stir well then serve with fried rice.
