Start by soaking cashews to soften them. Soak for at least 30 minutes in boiling hot water from the kettle.
Next, place all of the ingredients, including the soaked and drained cashews, in a blender.
Blend the ingredients until they make a silky smooth dressing. It should be thick, glistening and creamy.
Pour the dressing from the blender into a jar, or straight onto a vegan Caesar salad. Toss with Romain lettuce, croutons and vegan chicken. Sprinkle with vegan parmesan to finish.
