Simmer vegetable in a large pan. Rinse the Jasmine rice then add it into the pan. Bring to a low simmer.
Cook for 90 minutes with the lid on, stirring regularly to prevent sticking. If using brown rice, cook for 2 hours.
Once simmered, the rice will break down and resemble a soup-like, porridge consistency. At this point, add in any leafy greens of your choice. Then serve into bowls.
Serve with toppings of your choice such as: crumbled tofu seasoned with soy sauce, fresh ginger sticks and spring onion. Other toppings include grated carrot and sautéed mushrooms.
