Drain and rinse the jackfruit, then place in a large bowl. Use a potato masher or knife to break up the pieces of jackfruit.
Next, place all of the ingredients for the vegan coronation chicken in the bowl. That includes the vegan mayo, chutney, curry powder, lemon juice and raisins.
Mix well until all of the jackfruit is covered in the delicious yellow sauce. Top with flaked almonds (optional).
Serve as a sandwich with lettuce or as part of a big celebratory salad.
