Start by crumbling the firm tofu and then adding in the silken tofu, continue to mash it and combine them together.
Next, place all of the ingredients except the cress on top of the two types of tofu. That includes the nutritional yeast, turmeric powder, kala namak and vegan mayo.
With a spoon or a fork, combine all of the ingredients together. It should look like egg mayo and be a pale yellow colour.
Once combined, take two slices of bread and make a sandwich. Place a quarter of the vegan egg mayo into each sandwich and top with cress.
