Pop the onion into a pan with oil and fry for a couple of minutes until the onion has softened. Then add garlic.
Pop in the carrots and stir fry for a couple of minutes more.
Stir in the rice until well combined, then add soy sauce. Add scrambled tofu and peas then keep cooking until piping hot.
Finish with sliced spring onions. Great served with sweet and sour vegetables and spring rolls.
