Fry off the onions in oil or oil spray, until translucent.
Add spices, garlic and ginger.
Pop in lentils, then pour in stock, coconut milk and passata.
Once simmered, add in cauliflower. Simmer for 15 minutes.
Finally, pop in spinach, season and serve!
