Fry off onions and garlic in a splash of oil, then add the tomato puree. add the garlic, oregano, bay leaf and tomato purée.
Chuck in the mushrooms and carrots, stir, cook for 5 minutes. Add in tomatoes and stock.
Add in the vegan mince, stir well and simmer for 1 hour. No need for it to be covered, but stir it occasionally. Season, stir in fresh basil and serve with spaghetti.
