Heat the oil in a frying pan over a medium heat. Get the onion in the pan and cook until it's beginning to soften and go translucent.
1 onion, 1 tablespoon olive oil
Add the peppers and cook until everything has slightly browned.
1 red pepper, 1 green pepper
Chuck in the garlic, vegan beef strips and season with a good helping of salt and black pepper, then cook for another couple of minutes until everything is hot.
120 g vegan beef strips, 2 cloves garlic, Salt & black pepper
Put your cheese on top of the mix in your frying pan, and cover with a lid (or something else, like foil, if your pan doesn't have a lid) - the steam that's created from keeping the pan covered will help the cheese melt.
100 g vegan cheese
While the cheese is melting, spread vegan mayo the bread, and if you want extra room for filling, remove some of the inside of the bread (not ashamed to say we did this)!
2 tablespoon Vegan mayo, 2 baguettes
Serve the cheese-topped mix into your rolls and serve.
