Christmas Pancakes
This Christmassy take on vegan pancakes are a real winner with adults and children alike.

Ingredients
- 3 cups oats
- 2 cups almond milk
- 2 bananas
- 2 teaspoon vanilla extract
- 2 teaspoon cinnamon
- 2 apples – 1 grated, 1 chopped
For the maple sauce:
- ½ cup maple syrup
- 2 teaspoon cinnamon
Instructions
For the pancakes:
- Blend the oats until they turn to a fine powder/flour3 cups oats
- Add the bananas, milk, vanilla and cinnamon then blend up into a thick mixture2 cups almond milk, 2 bananas, 2 teaspoon vanilla extract, 2 teaspoon cinnamon, 2 teaspoon cinnamon
- Stir through the grated apple2 apples
- Cook about a quarter of a cup for each pancake in a non-stick pan - they should take a minute or two on each side.
- Serve with the chopped apple and cinnamon maple sauce (as below)
For the maple sauce:
- Add both ingredients to a pan, stir and heat through just before the pancakes are ready.½ cup maple syrup, 2 teaspoon cinnamon
- Drizzle over the pancakes and serve.
