Apple and cinnamon are rad Christmas flavours – we added them to these pancakes to make them Christmassy but you can devour them all through winter. They're stupidly simple to make and great for you too...who'd have thought it?! If you make them, let us know what you think in the comments!
Christmas Pancakes

Ingredients
- 3 cups oats
- 2 cups vegan milk (we use almond or hazelnut)
- 2 bananas
- 2 tsp vanilla extract
- 2 tsp cinnamon
- 1 grated apple
- 1 chopped apple to serve
For the maple sauce:
- ½ cup maple syrup
- 2 tsp cinnamon
Instructions
For the pancakes:
- Blend the oats until they turn to a fine powder/flour
- Add the bananas, milk, vanilla and cinnamon then blend up into a thick mixture
- Stir through the grated apple
- Fry about a quarter of a cup for each pancake in a non-stick pan - they should take a minute or two on each side.
- Serve with the chopped apple and cinnamon maple sauce (as below)
For the maple sauce:
- Add both ingredients to a pan, stir and heat through just before the pancakes are ready.
- Drizzle over the pancakes and serve.
